Shrimp Po-Boy Sandwich!

Fried shrimp is one of my favorite foods, and this sandwich is one of my favorite ways to eat fried shrimp! Like many of my recipés, This one doesn't start from scratch. If you opened it up to learn how to fry shrimp, you're out of luck: we start with fried shrimp!

We buy our shrimp ready-to-fry at Sam's Club® - Member's Mark™ brand - and they come already breaded and ready to fry, at about 15 shrimp per pound. My Honey uses a Fry Daddy™ cooker to bring them to a perfect golden hue, in just minutes. So, to begin with, this is what you need to have on hand:

Ingredients:
breaded shrimp, large, perfectly fried, 1 dozen.
sandwich rolls, white or whole wheat, 4 ea
dill pickle slices, kosher style, 12 to 20 ea
Roma tomatoes, ripe, medium sized, 2 ea, sliced
green leaf lettuce, fresh, 2 large leaves
mayonaise, 8 to 12 tbs
Directions:

For sandwich rolls, you can use about anything - even white bread! The best Po-Boys, though, are made with real sandwich rolls. Hoagie or submarine rolls, or even small Ciabatta rolls work well, but my current favorite though, is the Bolillo rolls that have become so ubiquitous in grocery stores around here. The crust isn't super hard, but is a little tough, which you need in order to hold (what can become a very wet) sandwiches together. Don't buy rolls that are already sliced - slice your own along one long side, leaving the top and bottom of the roll attached by the other long side (sort of like regular hot dog buns).

The dill slices are also pretty much available everywhere, just look for "hamburger slices."

Two Roma tomatoes, sliced, should provide enough to put about three good slices on each sandwich.

Open the sliced rolls up and apply 2 to 3 tbs mayonaise to the cut faces of each roll, spreading evenly, top and bottom. Load the bottom of the roll, first with pickle slices (3 to 5 each), fried shrimp (3 each), tomato slices (3 each) and lettuce (whatever makes you happy!). Close the sandwich by placing the cut, dressed face of the top of the roll on top of the lettuce.

Serves 4. Try to eat slowly. It's too good to inhale.
